Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs or breasts generously with thyme, smoked paprika, garlic powder, and onion powder.
  3. Cook the crispy bacon in a large cast iron pan over medium heat for about 5-7 minutes until golden brown and crispy.
  4. Sear the seasoned chicken skin-side down in the same pan for about 4-5 minutes per side until golden brown.
  5. Add sliced onions, Yukon Gold potatoes, and shredded cabbage to the pan, stirring in reserved crispy bacon pieces.
  6. Transfer the pan to the oven and roast for about 35-45 minutes until the chicken is cooked through and vegetables are tender.
  7. Carefully remove the pan from the oven and let it rest for a few minutes before serving warm.
