Method
- Heat oil in a large skillet over medium heat. Cook ground beef and onion until browned. Add garlic and stir.
- Stir in rice, beans, diced tomatoes, broth, cumin, and chili powder. Bring to a boil.
- Cover, reduce heat, and simmer for 18–20 minutes, or until rice is tender.
- Uncover and top with cheese. Cover again to melt the cheese, or broil for 2 minutes.
- Garnish with green onions and cilantro.
Notes
- Easily adaptable with ground turkey or veggie crumbles.
- Spice it up with jalapeños or hot sauce.
