- Preheat your oven to 375°F (190°C) and butter a 9 x 13 inch baking dish.
- Chop the country bread into large 1 to 1½ inch chunks and spread them evenly in the baking dish.
- In a large mixing bowl, combine the half & half, eggs, light brown sugar, vanilla extract, and ground cinnamon. Whisk until smooth.
- Pour the custard evenly over the bread chunks, pressing them down to ensure they are fully coated.
- Cover the baking dish with plastic wrap and refrigerate for at least 3 hours, preferably overnight.
- Before baking, let the casserole sit at room temperature for about 1 hour.
- Cover with aluminum foil and bake for 30 to 40 minutes until golden brown and puffed.
- Remove from the oven, let cool slightly, dust with powdered sugar, and serve warm with maple syrup.
