Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan with grease and parchment paper.
  2. In a bowl, combine flour, sugar, and melted butter. Press into the bottom of the pan and bake for 12-15 minutes.
  3. Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time and mix well, then pour over crust.
  4. Toss diced peaches with sugar, cornstarch, and cinnamon. Spoon over the cheesecake layer.
  5. Mix oats, brown sugar, and melted butter until crumbly. Sprinkle over the peach topping.
  6. Bake for 40-45 minutes until edges are bubbly. Cool completely at room temperature.
  7. Chill in the refrigerator for at least 2 hours before slicing into squares for serving.
