  • 2 cups All-Purpose Flour or gluten-free flour blend
  • 1 cup Brown Sugar can substitute with coconut sugar
  • 1/2 cup Granulated Sugar use regular white sugar
  • 1 teaspoon Baking Powder ensure it's fresh
  • 1 teaspoon Ground Cinnamon can use pumpkin spice instead
  • 1/4 teaspoon Ground Nutmeg omit if unavailable
  • 1/2 teaspoon Salt sea salt for alternative flavor
  • 1 cup Cold Butter, Cubed unsalted recommended
  • 1 large Egg or use flaxseed meal for egg-free
For the Peach Filling
  • 4 cups Chopped Fresh Peaches or drained canned/thawed frozen peaches
  • 1/2 cup Sugar adjust based on peach sweetness
  • 2 tablespoons Cornstarch can substitute with tapioca starch
  • 1 tablespoon Fresh Lemon Juice can be omitted
  • 1/2 teaspoon Ground Cinnamon adjust or omit based on taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine all-purpose flour, brown sugar, granulated sugar, baking powder, ground cinnamon, ground nutmeg, and salt. Whisk until well blended.
  3. Cut in the cold, cubed butter until the mixture resembles coarse crumbs, about 3-5 minutes.
  4. Add the beaten egg and stir gently until just combined.
  5. Press half of the mixture firmly into the bottom of the baking pan and bake for 15 minutes.
  6. In another bowl, mix fresh peaches with sugar, cornstarch, lemon juice, and ground cinnamon until well-coated.
  7. Spread the peach filling evenly over the pre-baked crust.
  8. Sprinkle the remaining crumb mixture over the peach filling.
  9. Bake for an additional 40-50 minutes until lightly golden brown on top.
  10. Cool completely on a wire rack before lifting and slicing into squares.
