- Start by peeling and finely chopping 2 to 3 ripe peaches or nectarines. If you prefer a smoother texture, pulse the fruits in a food processor until chopped.
- In a large mixing bowl, combine the chopped peaches or nectarines with about 2 cups of Greek or regular plain full-fat yogurt. Blend thoroughly until smooth and creamy.
- Stir in 1/4 cup of honey or agave syrup, 1 teaspoon of Tahitian vanilla extract, and a pinch of salt. Taste and adjust sweetness as necessary.
- Cover the bowl with plastic wrap and chill the yogurt mixture in the refrigerator for 30 minutes.
- Transfer the chilled mixture to an ice cream maker and churn according to the manufacturer’s instructions, around 20-25 minutes.
- Serve the frozen yogurt immediately for a soft-serve style, or transfer it to an airtight container and freeze for an additional 2-4 hours.
