Method
- Preheat oven to 350°F (175°C). Grease or line a mini muffin tin.
- In a bowl, whisk together flour, baking soda, and salt.
- Cream butter, peanut butter, and sugars until fluffy. Add egg and vanilla.
- Mix in dry ingredients until combined.
- Roll into 1-inch balls and place into muffin cups. Bake for 8–10 minutes.
- Immediately press a peanut butter cup into each cookie. Cool before removing.
Notes
- Chill dough if it's too soft to handle.
- Store in an airtight container for up to a week.
