In a large bowl, combine the mixed salad greens, shredded carrots, red cabbage, cucumber, red bell pepper, green onions, and cilantro. Toss gently to mix the vegetables evenly.
In a separate small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until smooth. If the dressing is too thick, add a tablespoon of warm water to thin it out.
Drizzle the dressing over the salad and toss until all the ingredients are well coated.
Add the chopped peanuts on top and season with salt and pepper to taste.
Serve immediately or chill in the refrigerator for about 15 minutes to enhance the flavors before serving.
