Pecan Pie Cookies are a delicious treat to bake!

Ingredients
  

  • 1/2 cup butter softened
  • 1/2 cup brown sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped pecans
  • 2 tablespoons corn syrup
  • 2 tablespoons brown sugar for filling

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and brown sugar until fluffy. Mix in egg yolk and vanilla.
  3. Stir in flour and salt to form dough.
  4. Roll into balls and create a small well in the center of each.
  5. Mix pecans, corn syrup, and brown sugar. Spoon filling into cookie centers.
  6. Bake for 12–14 minutes. Cool on a wire rack.

Notes

  • Chill dough for 20 minutes for easier handling. Add a dash of cinnamon for warmth.
