- Begin by peeling the potatoes and cutting them into 6 mm (1/4") batons. Soak in cold water to prevent browning.
- Rinse the cut fries under running water for 15-20 seconds to wash away surface sugars.
- Simmer the fries in a pot with cold water, vinegar, and salt for about 10 minutes until tender.
- Drain and let the fries steam dry on a towel for about 5 minutes.
- Heat oil to 205°C (400°F) and fry potatoes in batches for 50 seconds until slightly cooked.
