  3. Simmer the fries in a pot with cold water, vinegar, and salt for about 10 minutes until tender.
  4. Drain and let the fries steam dry on a towel for about 5 minutes.
  5. Heat oil to 205°C (400°F) and fry potatoes in batches for 50 seconds until slightly cooked.
  6. After cooling for 30 minutes, reheat oil and fry each batch for an additional 4 minutes until golden brown.
  7. Toss fries in salt or seasoning while hot and serve immediately for the best texture.
