Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 1 bell pepper any color, sliced
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 cups cooked rice white or brown
  • 1 cup beef broth
  • 1 cup corn canned or frozen
  • 1 cup black beans canned, drained, and rinsed
  • 1 cup shredded cheese cheddar or Mexican blend
  • Fresh cilantro chopped (for garnish)
  • Lime wedges for serving

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sliced bell pepper, and sauté for about 5 minutes until softened.
  2. Add the minced garlic, ground cumin, chili powder, salt, and pepper. Stir for 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Pour in the beef broth, corn, and black beans. Stir to combine and let simmer for 5 minutes.
  5. Serve the beef mixture over cooked rice, and top with shredded cheese. Allow the cheese to melt slightly before serving.
  6. Garnish with fresh cilantro and serve with lime wedges on the side.
