Ingredients
  

  • 4 medium ripe tomatoes diced
  • 3 garlic cloves minced
  • 3 tablespoons fresh basil chopped
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and black pepper to taste
  • 2 large boneless skinless chicken breasts
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil for cooking the chicken
  • 12 ounces spaghetti fettuccine, or your pasta of choice
  • 1 tablespoon olive oil for tossing pasta
  • ½ cup grated Parmesan cheese
  • ¼ cup reserved pasta water

Method
 

  1. Prepare the Bruschetta Topping
  2. Dice the tomatoes and place them in a medium-sized mixing bowl.
  3. Add minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and black pepper. Mix well and set aside.
  4. Cook the Pasta
  5. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
  6. Reserve ¼ cup of pasta water before draining. Toss the drained pasta with olive oil to keep it from sticking, and set it aside.
  7. Season and Cook the Chicken
  8. Season the chicken breasts with Italian seasoning, garlic powder, salt, and black pepper.
  9. Heat olive oil in a large skillet over medium heat. Cook the chicken for 5-6 minutes per side or until golden brown and fully cooked.
  10. Remove the chicken from the skillet and let it rest for a few minutes. Slice it into thin strips.
  11. Combine the Pasta and Toppings
  12. In the same skillet used for cooking the chicken, add the cooked pasta along with the reserved pasta water and grated Parmesan cheese. Toss to coat evenly.
  13. Add the sliced chicken and spoon the bruschetta topping over the pasta. Mix gently to combine all the flavors.
  14. Garnish and Serve
  15. Serve immediately, garnished with additional basil or Parmesan cheese if desired. Enjoy!
