Method
Preheat the Oven:
- Preheat your oven to 425°F (218°C).
- Line a baking sheet with parchment paper and set it aside.
Prepare the Zucchini:
- Grate the zucchini using the large holes on a box grater.
- Transfer the grated zucchini to a clean kitchen towel, wrap it tightly, and wring out as much water as possible over the sink.
Mix the Ingredients:
- In a large mixing bowl, combine the grated zucchini, ½ cup shredded mozzarella, Parmesan cheese, egg, Italian seasoning, salt, and garlic powder.
- Mix well until all the ingredients are thoroughly combined.
Form the Breadstick Base:
- Spread the zucchini mixture onto the prepared baking sheet, shaping it into a rectangular or oval shape about ½ inch thick.
Bake the Base:
- Bake in the preheated oven for 15 minutes, or until the edges are golden and the center is set.
Add the Topping:
- Remove the baking sheet from the oven. Sprinkle the top evenly with 1 cup of shredded mozzarella cheese.
- Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Cool and Slice:
- Allow the breadsticks to cool for 3–4 minutes.
- Slice into breadstick-sized pieces and serve warm.
Notes
- Water Removal Tip: Removing excess moisture from the zucchini is crucial for achieving a firm, crispy base.
- Customize Your Toppings: Add red pepper flakes, extra Parmesan, or fresh herbs for additional flavor.
- Reheating Instructions: Reheat leftovers in the oven or air fryer to restore crispiness.
- Storage: Store in an airtight container in the refrigerator for up to 3 days.
