Ingredients

  • 4 cups grated zucchini about 2 large zucchini
  • ½ cup shredded mozzarella cheese
  • cup finely shredded Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon garlic powder

  • 1 cup finely shredded mozzarella cheese

Method
 

Preheat the Oven:
  1. Preheat your oven to 425°F (218°C).
  2. Line a baking sheet with parchment paper and set it aside.
Prepare the Zucchini:
  1. Grate the zucchini using the large holes on a box grater.
  2. Transfer the grated zucchini to a clean kitchen towel, wrap it tightly, and wring out as much water as possible over the sink.
Mix the Ingredients:
  1. In a large mixing bowl, combine the grated zucchini, ½ cup shredded mozzarella, Parmesan cheese, egg, Italian seasoning, salt, and garlic powder.
  2. Mix well until all the ingredients are thoroughly combined.
Form the Breadstick Base:
  1. Spread the zucchini mixture onto the prepared baking sheet, shaping it into a rectangular or oval shape about ½ inch thick.
Bake the Base:
  1. Bake in the preheated oven for 15 minutes, or until the edges are golden and the center is set.
Add the Topping:
  1. Remove the baking sheet from the oven. Sprinkle the top evenly with 1 cup of shredded mozzarella cheese.
  2. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Cool and Slice:
  1. Allow the breadsticks to cool for 3–4 minutes.
  2. Slice into breadstick-sized pieces and serve warm.
