  1. Start by bringing a large pot of water to a rolling boil. Cook the dried pho noodles according to package instructions, drain and set aside.
  2. In a medium pot, heat low sodium chicken broth to a boil. Add ginger, red chilies, fish sauce, and sugar, then reduce to a simmer for 15 minutes.
  3. Season sliced chicken with salt and pepper. In a skillet, heat oil and sear chicken until golden brown, about 3-4 minutes per side, then set aside.
