Preheat the Oven
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or grease it lightly with oil.
Prepare the Potatoes
Wash and dry the potatoes thoroughly. Slice them into evenly sized wedges. For extra crispiness, soak the potato wedges in cold water for 30 minutes, then pat them dry completely.
Mix the Seasoning
In a large bowl, combine olive oil, minced garlic, parmesan cheese, Italian seasoning, paprika, salt, and pepper. Stir well to create a flavorful coating.
Season the Potatoes
Add the potato wedges to the bowl and toss them until every wedge is evenly coated with the seasoning mixture.
Arrange on a Baking Sheet
Spread the wedges on the prepared baking sheet in a single layer. Ensure they are not overlapping to allow proper air circulation for even crisping.
Bake the Wedges
Place the baking sheet in the preheated oven and bake for 35–40 minutes, flipping the wedges halfway through cooking. Bake until they are golden brown and crispy on the outside and tender on the inside.
Garnish and Serve
Remove the wedges from the oven and sprinkle them with freshly chopped parsley and a little extra parmesan cheese. Serve hot with your favorite dipping sauce.
