Ingredients

  • 4 large russet potatoes washed and sliced into wedges
  • 4 tablespoons olive oil
  • 3 garlic cloves minced
  • ½ cup grated parmesan cheese
  • 1 tablespoon Italian seasoning oregano, thyme, and basil
  • 1 teaspoon paprika
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 2 tablespoons fresh parsley chopped (optional, for garnish)

Method

  1. Preheat the Oven
  2. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or grease it lightly with oil.
  3. Prepare the Potatoes
  4. Wash and dry the potatoes thoroughly. Slice them into evenly sized wedges. For extra crispiness, soak the potato wedges in cold water for 30 minutes, then pat them dry completely.
  5. Mix the Seasoning
  6. In a large bowl, combine olive oil, minced garlic, parmesan cheese, Italian seasoning, paprika, salt, and pepper. Stir well to create a flavorful coating.
  7. Season the Potatoes
  8. Add the potato wedges to the bowl and toss them until every wedge is evenly coated with the seasoning mixture.
  9. Arrange on a Baking Sheet
  10. Spread the wedges on the prepared baking sheet in a single layer. Ensure they are not overlapping to allow proper air circulation for even crisping.
  11. Bake the Wedges
  12. Place the baking sheet in the preheated oven and bake for 35–40 minutes, flipping the wedges halfway through cooking. Bake until they are golden brown and crispy on the outside and tender on the inside.
  13. Garnish and Serve
  14. Remove the wedges from the oven and sprinkle them with freshly chopped parsley and a little extra parmesan cheese. Serve hot with your favorite dipping sauce.

Notes

  • Customizable Seasoning: Add a pinch of chili flakes or cayenne pepper if you like a spicy kick.
  • Cheese Alternatives: Substitute parmesan with grated pecorino or a dairy-free cheese option for dietary preferences.
  • Leftovers: Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat them in the oven at 375°F to restore their crispiness.
  • Dipping Sauce Ideas: These wedges pair perfectly with ranch dressing, garlic aioli, or spicy sriracha mayo.
