Ingredients
  

  • 2 boneless skinless chicken breasts
  • 1 cup buttermilk
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste
  • Oil for frying
  • 1 roasted red bell pepper
  • 1/4 cup almonds toasted
  • 1 garlic clove
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1/2 tsp smoked paprika
  • 4 brioche buns
  • Lettuce tomato, and onion slices

Method
 

  1. Marinate the chicken in buttermilk, garlic powder, smoked paprika, salt, and pepper for 30 minutes.
  2. Blend roasted red pepper, almonds, garlic, olive oil, vinegar, paprika, salt, and pepper into a smooth romesco sauce.
  3. Bread the chicken with flour, buttermilk, and breadcrumbs. Fry until golden and cooked through.
  4. Assemble the sandwich with buns, romesco sauce, chicken, and toppings.

Notes

    • For extra crunch, double-coat the chicken.
    • Substitute gluten-free breadcrumbs for a gluten-free version.
