Ingredients
  

  • Boneless skinless chicken breasts (4, 6 ounces each)
  • Italian seasoning 2 teaspoons
  • Kosher salt 1 teaspoon
  • Onion powder 1 teaspoon
  • Garlic powder 1 teaspoon
  • Ground black pepper 1 teaspoon
  • Olive oil 1-2 tablespoons
For the Bruschetta Topping:
  • Ripe tomatoes 3-4 medium, about 1 lb, cored, seeded, and diced
  • Kosher salt 1 teaspoon
  • Garlic cloves 2, minced
  • Extra virgin olive oil 1 tablespoon
  • Balsamic vinegar 2 teaspoons
  • Fresh basil leaves 2 tablespoons, thinly sliced
  • Ground black pepper to taste
  • Balsamic glaze to taste (optional)

Method
 

  1. Prepare the Chicken: Pat the chicken dry and season with Italian seasoning, salt, onion powder, garlic powder, and black pepper. Drizzle with olive oil to coat evenly.
  2. Grill the Chicken: Heat a grill or grill pan over medium-high heat. Cook the chicken for 5-6 minutes per side, until it reaches an internal temperature of 165°F (75°C). Let it rest for 5 minutes.
  3. Make the Bruschetta Topping: In a bowl, combine the diced tomatoes, salt, minced garlic, extra virgin olive oil, balsamic vinegar, and basil. Stir gently and season with ground black pepper to taste.
  4. Assemble & Serve: Spoon the bruschetta topping over the grilled chicken and drizzle with balsamic glaze if desired. Serve immediately.

  • For the best flavor, use fresh, ripe tomatoes and high-quality balsamic vinegar.
  • If grilling is not an option, the chicken can be pan-seared or baked at 400°F for 20 minutes.
