Ingredients
  

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter melted
  • 1/4 cup unsalted butter for glaze
  • 2 tablespoons honey

Method
 

  1. Preheat oven to 375°F and grease a mini muffin tin.
  2. Mix cornmeal, flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Whisk buttermilk, eggs, and melted butter in a separate bowl. Combine with dry ingredients until just mixed.
  4. Fill mini muffin cups 2/3 full and bake for 12-15 minutes.
  5. Melt butter with honey for the glaze and brush over warm poppers.

Notes

  • Serve warm with extra honey butter for dipping.
  • Add jalapeños or cheese for a savory twist.
