Quick & Easy Ground Beef and Rice Skillet

Ingredients
  

  • 1 lb lean ground beef
  • 1 cup long-grain white rice
  • 1 medium onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 2 cups beef broth
  • 1 can 14.5 oz diced tomatoes, undrained
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Optional: 1 cup shredded cheddar cheese for topping

Method
 

  1. Sauté the Aromatics
  2. Heat olive oil in a large skillet over medium heat.
  3. Add diced onion and bell pepper; cook for 3-4 minutes until softened.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Brown the Beef
  6. Add ground beef to the skillet and cook until browned, breaking it up as it cooks.
  7. Drain excess fat if needed.
  8. Toast the Rice & Add Seasonings
  9. Stir in rice, paprika, oregano, salt, and pepper.
  10. Cook for 1-2 minutes to allow the rice to absorb flavors.
  11. Simmer to Perfection
  12. Pour in beef broth and diced tomatoes with their juices.
  13. Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender.
  14. Add Cheese & Serve
  15. If using, sprinkle shredded cheddar cheese over the top.
  16. Cover and let sit for a few minutes until the cheese melts.
  17. Fluff the rice with a fork and serve hot.

Notes

    • For extra spice, add a pinch of red pepper flakes or cayenne.
    • Use brown rice for a healthier option, but increase the cooking time by 15 minutes.
    • Swap the beef for ground turkey or chicken for a lighter version.
    • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stovetop with a splash of broth to keep it moist.
