Sauté the Aromatics
Heat olive oil in a large skillet over medium heat.
Add diced onion and bell pepper; cook for 3-4 minutes until softened.
Stir in minced garlic and cook for 30 seconds until fragrant.
Brown the Beef
Add ground beef to the skillet and cook until browned, breaking it up as it cooks.
Drain excess fat if needed.
Toast the Rice & Add Seasonings
Stir in rice, paprika, oregano, salt, and pepper.
Cook for 1-2 minutes to allow the rice to absorb flavors.
Simmer to Perfection
Pour in beef broth and diced tomatoes with their juices.
Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender.
Add Cheese & Serve
If using, sprinkle shredded cheddar cheese over the top.
Cover and let sit for a few minutes until the cheese melts.
Fluff the rice with a fork and serve hot.
