Ingredients

  • 1 ½ cups shredded coconut divided into ½ cup portions
  • Food coloring any colors
  • 12 sugar cookies prepared or store-bought
  • 16 ounces vanilla frosting
  • Sprinkles any colors
  • 12 white candy melt wafers
  • 36 mini white chocolate chips

Method

  1. Color the Coconut – Divide the shredded coconut into three small bowls (½ cup each). Add a few drops of food coloring to each bowl and mix until evenly coated. Let it dry for a few minutes.
  2. Frost the Cookies – Spread a thick layer of vanilla frosting on each sugar cookie.
  3. Decorate with Coconut & Sprinkles – Sprinkle the colored coconut over the frosting, then add a handful of sprinkles for extra texture.
  4. Add the Candy Melt & Chocolate Chips – Place a white candy melt wafer in the center of each cookie. Add three mini white chocolate chips around the wafer for decoration.
  5. Let Them Set & Serve – Allow the cookies to set for a few minutes before serving. Enjoy immediately or store for later!

Notes

  • For a tropical flavor, use toasted coconut instead of raw coconut.
  • Swap vanilla frosting for chocolate, cream cheese, or lemon frosting for a flavor twist.
  • Store cookies in an airtight container for up to 3 days at room temperature.
