Ingredients
  

  • 1 pound ground beef
  • 1 medium green bell pepper chopped
  • 1 medium onion chopped
  • 1 can 10.75 ounces condensed tomato soup
  • 1 package 3.5 ounces sliced pepperoni
  • 2 cups shredded mozzarella cheese
  • 1 package 32 ounces frozen tater tots

Method
 

  1. Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.
  2. In a large skillet over medium heat, cook the ground beef, chopped bell pepper, and onion until the beef is browned and the vegetables are soft. Drain any excess grease.
  3. Stir in the condensed tomato soup, mixing well to coat the beef and vegetables.
  4. Spread the beef mixture evenly in the prepared baking dish. Layer half of the pepperoni slices over the meat.
  5. Sprinkle 1 cup of shredded mozzarella cheese over the mixture, then arrange the tater tots in a single layer on top.
  6. Bake uncovered for 30 minutes. Remove from the oven, sprinkle the remaining 1 cup of mozzarella cheese over the tots, and add the remaining pepperoni slices.
  7. Return to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and the tater tots are golden brown.
  8. Let cool for a few minutes before serving. Enjoy!

Notes

  • For extra crispiness, bake the tater tots for 10 minutes before adding them to the casserole.
  • Try swapping the ground beef for Italian sausage or ground turkey for a different flavor.
  • Add mushrooms, olives, or jalapeños for extra pizza-inspired toppings.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
