Quick & Easy Triple Berry Crumble Bars

Ingredients
  

For the Oatmeal Base & Topping:
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 1/2 cups large flake or old-fashioned oats
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup butter melted
  • 1 large egg
For the Berry Layer:
  • 4 1/2 cups mixed berries strawberries, blueberries, raspberries, or blackberries
  • 1/2 cup white sugar
  • 2 tablespoons freshly squeezed lemon juice
  • 3 tablespoons cornstarch

Method
 

  1. Preheat & Prepare the Crumble: Preheat the oven to 350°F (175°C). Grease or line a baking dish with parchment paper. In a large bowl, mix flour, cinnamon, oats, white sugar, and brown sugar. Stir in the melted butter and egg until a crumbly dough forms.
  2. Make the Berry Filling: In another bowl, toss the mixed berries with sugar, lemon juice, and cornstarch. Stir well to coat the berries evenly.
  3. Assemble the Bars: Press two-thirds of the oat mixture firmly into the bottom of the prepared baking dish. Spread the berry filling evenly over the base. Sprinkle the remaining oat mixture over the top.
  4. Bake & Cool: Bake for 40-45 minutes or until the top is golden brown and the berry layer is bubbling. Allow the bars to cool completely before slicing to help them set.

Notes

  • If using frozen berries, thaw and drain them before using to prevent excess liquid.
  • Adjust the sugar level depending on how sweet or tart your berries are.
  • Let the bars cool completely for cleaner slices.
  • Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
