Ingredients

For the Cake:
  • 1 box white cake mix plus ingredients required on the package: water, oil, eggs
  • Gel food coloring pink, purple, yellow, and light blue
For the Pudding Layer:
  • 2 boxes 3.5 oz each instant cheesecake pudding mix
  • cups cold milk
For the Topping:
  • 1 container 8 oz whipped topping, thawed
  • Easter-themed sprinkles or mini chocolate eggs for decoration

Method

  1. Preheat and Prepare the Cake
  2. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  3. Prepare the cake batter according to the package instructions.
  4. Create the Swirls
  5. Divide the batter evenly into four bowls.
  6. Add a few drops of pink, purple, yellow, and light blue gel food coloring to each bowl and mix until vibrant.
  7. Spoon the colored batters randomly into the prepared baking dish, then use a knife or skewer to gently swirl the colors together.
  8. Bake the Cake
  9. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let the cake cool for about 10 minutes.
  11. Poke the Cake & Add the Pudding
  12. Use the handle of a wooden spoon to poke holes evenly across the cake.
  13. In a medium bowl, whisk together the cheesecake pudding mix and milk until slightly thickened but still pourable.
  14. Pour the pudding evenly over the cake, ensuring it fills the holes.
  15. Chill & Add Toppings
  16. Refrigerate for at least 2 hours to allow the pudding to set.
  17. Spread the whipped topping evenly over the cake.
  18. Decorate with Easter sprinkles or mini chocolate eggs.
  19. Serve and Enjoy
  20. Slice and serve chilled for the best texture and flavor.

Notes

  • For a stronger swirl effect, avoid over-mixing the colored batters when swirling.
  • Best served chilled, as the pudding sets into the cake for a soft, creamy texture.
  • Customize it! Try using vanilla or white chocolate pudding for a different flavor.
  • Make ahead: This cake can be prepared the night before for a stress-free Easter dessert.
