For the Dressing
  • 1/4 cup Extra Virgin Olive Oil light olive oil can be used
  • 1 large Lemon juiced, white wine vinegar can substitute
  • 1/2 teaspoon Fine Sea Salt use sea salt instead of kosher if preferred
  • 1/4 teaspoon Freshly Cracked Black Pepper white pepper can be a milder option

Method
 

Preparation Steps
  1. Wash the romaine lettuce under cold water. Slice the lettuce into bite-sized pieces and dry it using a salad spinner.
  2. Finely slice the green onions and chop the fresh dill.
  3. In a medium bowl, combine extra virgin olive oil, lemon juice, fine sea salt, and black pepper. Whisk until well emulsified.
  4. In a large bowl, add the lettuce, green onions, dill, and crumbled feta. Gently mix the ingredients.
  5. Pour dressing over the salad and toss gently to ensure even coating.
  6. Garnish with sprigs of dill and serve immediately.
