Step-by-Step Instructions
  1. Finely chop the fresh rhubarb and place it in a bowl. Sprinkle sugar over the chopped rhubarb and toss gently. Allow to sit for about 10 minutes.
  2. In a separate mixing bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg until evenly combined.
  3. Beat an egg until fluffy, then mix in the milk and vanilla extract until well combined.
  4. Gently fold the wet mixture into the dry ingredients until just combined, then add the sugared rhubarb and fold it in.
  5. Heat oil in a deep skillet to 350°F (175°C).
