Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces

  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 3 cloves garlic minced
  • 2 cups broccoli florets
  • 2 cups fresh baby spinach
  • ½ cup cherry tomatoes halved
  • 4 ounces cream cheese softened
  • ½ cup shredded mozzarella cheese

Method
 

Sauté the Chicken:
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the chicken pieces and season with Italian seasoning, salt, and pepper.
  3. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
Add Aromatics and Vegetables:
  1. Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  2. Incorporate broccoli florets and cherry tomatoes; cook for an additional 3-4 minutes until the broccoli is tender-crisp.
Introduce Spinach and Cheeses:
  1. Stir in the fresh spinach, allowing it to wilt slightly.
  2. Add cream cheese and shredded mozzarella, stirring until the cheeses are melted and evenly coat the chicken and vegetables.
Serve:
  1. Remove from heat and serve immediately.
  2. Pair with cauliflower rice, zucchini noodles, or your preferred side.

Notes

  • For extra flavor, add red pepper flakes or a squeeze of lemon juice.
  • Make it dairy-free by using coconut cream and dairy-free cheese.
