  • 2 cups Fresh Spinach or kale/Swiss chard substitutes
  • 1/2 cup Sun-Dried Tomatoes can use fresh tomatoes in a pinch
  • 2 cloves Garlic minced
  • 1/4 teaspoon Red Pepper Flakes optional for heat
For Seasoning
  • 1 teaspoon Garlic Powder optional, fresh minced adds bolder flavor
  • 1 teaspoon Dried Oregano fresh oregano can be used
  • 1 teaspoon Smoked Paprika regular paprika can substitute
For Cooking
  • 2 tablespoons Olive Oil or avocado oil/butter for preference

Method
 

Preparation Steps
  1. Preheat the Oven to 375°F (190°C).
  2. Butterfly the chicken breasts and pound them to uniform thickness.
  3. Combine feta, spinach, sun-dried tomatoes, garlic, and red pepper flakes in a bowl.
  4. Season chicken breasts with salt, pepper, garlic powder, oregano, and paprika.
  5. Roll the chicken around the filling and secure ends with toothpicks.
  6. Sear the chicken rolls in olive oil for 3-4 minutes on each side.
  7. Transfer to the oven and bake for 25 minutes until cooked through.
  8. Rest the chicken for 5 minutes before slicing and serving.
