Ingredients
  

  • 1 can 14.75 oz salmon, drained and flaked
  • ½ cup breadcrumbs panko or regular
  • ¼ cup mayonnaise
  • 1 small onion finely chopped
  • 1 egg beaten
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley chopped
  • 2 tbsp vegetable oil for frying

Method
 

  1. Prepare the Mixture: In a large bowl, combine flaked salmon, breadcrumbs, mayonnaise, onion, beaten egg, Dijon mustard, lemon juice, garlic powder, onion powder, paprika, salt, black pepper, and parsley. Mix well until fully combined.
  2. Form the Croquettes: Shape the mixture into small patties or oval-shaped croquettes (about 2 inches in diameter).
  3. Heat the Oil: In a large skillet, heat vegetable oil over medium heat.
  4. Cook the Croquettes: Fry the croquettes for 3-4 minutes per side or until golden brown and crispy. Drain on a paper towel-lined plate.
  5. Serve: Enjoy warm with tartar sauce, remoulade, or a squeeze of fresh lemon juice.

Notes

  • For extra crispiness, coat the croquettes in additional breadcrumbs before frying.
  • You can use fresh or canned salmon—just make sure to remove any bones and skin.
  • Bake at 400°F (200°C) for 15-20 minutes as a healthier alternative to frying.
