Step-by-Step Instructions for Sausage Zucchini Rice Casserole
  1. Prepare the sausage by slicing it into 1/4-inch rounds and set aside.
  2. Chop the onion and red bell pepper into small pieces, and mince the garlic.
  3. Drain the shredded zucchini and pat dry with a kitchen towel.
  4. Heat olive oil in a large skillet over medium-high heat. Add the sausage and cook for 3-4 minutes until golden brown.
  5. Add the chopped onion and red bell pepper to the skillet, sauté for 2-3 minutes. Stir in the minced garlic and cook for an additional 30 seconds.
