Ingredients

For the Base
  • 2 tablespoons Vegetable or Grapeseed Oil Substitute with canola or olive oil if preferred.
  • 4 cloves Garlic Thinly sliced.
  • 4 cups Cooked Cold Long Grain White Rice (Jasmine) Day-old rice is ideal.
  • 1 teaspoon Rock Salt Feel free to swap with regular salt if needed.
For Garnish
  • 2 tablespoons Scallions Finely chopped; omit or use chives if out of scallions.

Equipment

  • Large pan

Method

Step-by-Step Instructions
  1. Begin by heating a large pan over medium-low heat and adding enough vegetable or grapeseed oil to coat the bottom. Once the oil shimmers, add the thinly sliced garlic, stirring frequently for about 4-5 minutes.
  2. Take your cold leftover jasmine rice and break up any clumps using a rice paddle or spatula. Carefully add the rice to the pan with the fried garlic and oil. Mix the rice thoroughly, allowing it to cook for an additional 2-3 minutes.
  3. Once the rice is heated, sprinkle in rock salt to enhance the flavors. Stir in the finely chopped scallions, mixing gently so everything is combined.
  4. Scoop generous portions into bowls while it’s still hot and fluffy. Serve immediately.

Notes

For best results, watch the garlic closely to prevent burning and ensure you use cold day-old rice for fluffiness.
