For Protein
  • 1 cup Bacon pre-cooked
  • 1 cup Breakfast Sausage pre-cooked
  • 1 cup Tofu firm, pre-cooked

Method
 

Cooking Steps
  1. Peel the sweet potatoes and cut them into small cubes, about ½ inch each.
  2. Trim the stems from the Brussels sprouts and slice each one in half.
  3. Heat 2 tablespoons of olive or avocado oil in a large skillet over medium heat until shimmering.
  4. Add the diced sweet potatoes to the skillet and sauté for 8-10 minutes until golden brown.
  5. Incorporate the halved Brussels sprouts, chopped onions, and bell peppers into the skillet, season with spices, and cook for another 10-12 minutes.
  6. Continuously stir the mixture for about 10-12 minutes to caramelize the veggies.
  7. Add your choice of pre-cooked protein to the skillet and stir to heat through for about 5 minutes.
  8. Remove the skillet from heat, and garnish with fresh herbs or avocado slices before serving.
