- Begin by patting 1 lb of sirloin or ribeye steak cubes dry with paper towels to ensure crispy searing. Season generously with salt and pepper on all sides. Leave them to rest while you prepare your cooking equipment.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering. Add the prepared steak cubes in batches and sear each side for about 2–3 minutes until they develop a brown crust. Remove and keep warm.
- Lower the heat and add 3 tablespoons of unsalted butter to the skillet. Toss in 4 minced garlic cloves and sauté for about 30 seconds. Return the steak bites to the skillet, tossing in the butter-garlic mixture.
- In a separate saucepan, melt 1 tablespoon of butter over medium heat. Sauté 2 minced cloves of garlic for about 30 seconds. Pour in 1 cup of heavy cream, stirring continuously until it simmers and thickens slightly, about 3-4 minutes.
- Gradually stir in ½ cup of freshly grated Parmesan cheese until it melts completely and the sauce is smooth. Season with salt and pepper to taste.
- Plate the Garlic Butter Steak Bites and drizzle with the creamy Parmesan sauce. Garnish with chopped parsley and red pepper flakes. Serve immediately.
