Method
 

Cooking Instructions
  1. Preheat the oven to 325°F (163°C).
  2. Remove the neck and giblets from the turkey. Season inside with salt and pepper.
  3. In a food processor, blend butter, apricot preserves, sage, and rosemary until smooth.
  4. Spread the glaze under the turkey skin, and arrange carrots, celery, and onion in a roasting pan.
  5. Brush melted glaze over the turkey. Roast for 3 to 3½ hours, basting every hour.
  6. Rest the turkey for 15 minutes before carving.
  7. To make the gravy, stir flour into pan drippings, add broth, and whisk until thickened.
