Ingredients
  

  • 3 lb beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 3 garlic cloves minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Heat olive oil in a skillet and sear roast on all sides
  2. Place roast in slow cooker and top with onion and garlic
  3. Add broth, Worcestershire sauce, thyme, salt, and pepper
  4. Cover and cook on low for 8 hours or until tender
  5. Shred meat and return to juices before serving
  6.

  • Add carrots and potatoes for a full one-pot meal

  • Thickening the sauce with a cornstarch slurry makes a delicious gravy
