- Prepare the Nuoc Cham by whisking together fish sauce, sugar, rice wine vinegar, lime juice, minced garlic, chopped chili, and water in a mixing bowl. Let sit for 10 minutes.
- Soak the vermicelli noodles in boiled water for 5-7 minutes until soft. Drain and rinse under cold water.
- In a bowl, mix pork mince with fish sauce, sugar, minced garlic, white pepper, and lemongrass paste. Shape into 12-15 meatballs.
- Heat oil in a skillet and cook the meatballs for 2-2.5 minutes on each side until golden brown.
- Assemble serving bowls with noodles at the base, topped with meatballs, fresh vegetables, and drizzled with Nuoc Cham sauce.
