For the Creamy Sauce
  • 1 cup Greek Yogurt Can be replaced with sour cream thinned with milk.
  • 1/2 cup Milk Use any type of milk you enjoy.
  • 1 tablespoon Olive Oil Skip for a lighter dish.
For the Topping
  • 1 cup Cheese (Monterey Jack/Cheddar) Shred your own cheese for better melt.

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine shredded chicken, garlic powder, cumin, salt, and pepper.
  3. Warm the tortillas in the microwave for about 10 seconds.
  4. Lay each warm tortilla flat and spoon about ¼ cup of the chicken filling onto the center. Roll tightly and place seam-side down in a greased baking dish.
  5. In a separate bowl, whisk together Greek yogurt, milk, and olive oil until smooth.
  6. Pour the creamy white sauce over the enchiladas and sprinkle cheese on top. Bake for about 20 minutes.
  7. Let cool for about 5 minutes before serving.
