- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine shredded chicken, garlic powder, cumin, salt, and pepper.
- Warm the tortillas in the microwave for about 10 seconds.
- Lay each warm tortilla flat and spoon about ¼ cup of the chicken filling onto the center. Roll tightly and place seam-side down in a greased baking dish.
- In a separate bowl, whisk together Greek yogurt, milk, and olive oil until smooth.
- Pour the creamy white sauce over the enchiladas and sprinkle cheese on top. Bake for about 20 minutes.
- Let cool for about 5 minutes before serving.
