Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Prepare your baking sheet lined with parchment paper while you wait.
  2. Place the puff pastry shells on the prepared baking sheet. Bake for about 15-20 minutes, until golden brown. Cool on a wire rack.
  3. In a sauté pan over medium heat, melt 2 tablespoons of butter. Add the chopped onion and minced garlic, stirring for about 3-4 minutes until translucent.
  4. Add 8 ounces of sliced mushrooms, cooking for 5-7 minutes until browned and moist.
  5. Add the thinly sliced chicken breast, cooking for about 5-6 minutes until fully cooked.
  6. Sprinkle in 2 tablespoons of all-purpose flour and mix thoroughly. Gradually add 1 cup of chicken stock, stirring continuously until thickened, about 3-4 minutes.
  7. Lower the heat and stir in 3/4 cup of heavy cream, simmer gently for 2-3 minutes. Fold in 1 tablespoon of fresh herbs, seasoning with salt and pepper to taste.
  8. Carefully fill each puff pastry shell with the rich filling, being generous.
