Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
  2. In a large mixing bowl, combine the chicken breasts, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and sprinkle with oregano, basil, smoked paprika, salt, and black pepper. Toss until well coated.
  3. Spread the mixture evenly in the baking dish and top with mozzarella and Parmesan cheese.
  4. Cover with aluminum foil and bake for 20 minutes.
  5. Remove the foil and bake for an additional 10-15 minutes until chicken reaches 165°F (75°C) and cheese is bubbly.
  6. Let it rest for a few minutes, then garnish with parsley before serving.
