Step-by-Step Instructions for Chili Lime Chicken
  1. In a large bowl, vigorously whisk together fresh lime juice, honey, chopped cilantro, minced garlic, chili powder, cumin, onion powder, kosher salt, and cayenne pepper until fully combined.
  2. Add the boneless, skinless chicken thighs to the bowl, ensuring each piece is generously coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 20 minutes.
  3. While the chicken marinates, preheat your oven to 400°F (200°C).
  4. In an oven-safe skillet, heat vegetable oil over medium-high heat and carefully place the marinated chicken thighs into the skillet. Sear them for 2-3 minutes on each side.
