  • 1 cup Cheddar Cheese Shredded; can substitute with Monterey Jack.

Method
 

Step-by-Step Instructions
  1. In a large bowl, combine ground beef, minced garlic, egg, cilantro, bread crumbs, chili powder, cumin, oregano, and salt and pepper. Mix gently until just combined.
  2. Using a tablespoon, portion out the meatball mixture and roll it into 2-inch meatballs, placing them on a plate.
  3. Preheat an iron skillet over medium heat with olive oil. Sear meatballs for about 2 minutes per side until browned and the internal temperature reaches 160°F.
  4. Pour red enchilada sauce over the meatballs and top with shredded cheddar cheese.
  5. Transfer the skillet to a preheated oven at 350°F and bake for about 15 minutes.
  6. Let cool slightly, then serve with optional toppings.
