Ingredients
  

  • 1 lb ground turkey
  • 2 large sweet potatoes peeled and cubed
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup milk
  • 2 eggs beaten

Method
 

  1. Preheat oven to 375°F.
  2. Toss cubed sweet potatoes with olive oil, salt, pepper, and paprika. Roast on a baking sheet for 20 minutes.
  3. Meanwhile, cook ground turkey and onion in a skillet until turkey is browned. Add garlic and thyme; cook 1 minute.
  4. In a bowl, whisk milk and eggs.
  5. In a greased 9x9-inch dish, layer sweet potatoes and turkey mixture. Pour egg mixture over and top with cheese.
  6. Bake for 20–25 minutes, until set and golden.

Notes

  • Add spinach or kale for extra greens. Use dairy-free cheese and milk for a dairy-free option.
