In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spatula, about 5-7 minutes. Season with salt and pepper.
Add the minced garlic and ginger to the skillet, stirring for about 30 seconds until fragrant.
Add the sliced bell pepper, broccoli florets, and snap peas to the skillet. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
In a small bowl, mix the soy sauce, oyster sauce, sesame oil, cornstarch, and water until well combined. Pour this sauce over the turkey and vegetables in the skillet.
Stir everything together and cook for an additional 2-3 minutes until the sauce thickens and coats the stir-fry.
Serve hot over cooked rice or noodles.
