Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground pork, kimchi, onion, garlic, ginger, soy sauce, rice wine (if using), egg, sesame oil, salt, and pepper. Blend until uniform.
  2. Cover the bowl with plastic wrap and refrigerate for at least 20 minutes to meld flavors.
  3. Lay out dumpling wrappers and moisten edges with cold water to seal.
  4. Place a tablespoon of filling in the center of each wrapper, fold in half, and pinch edges tightly.
  5. Arrange filled dumplings on a parchment-lined tray, cover with a tea towel to keep moist.
  6. Heat oil in a skillet over medium heat, fry dumplings for 4-5 minutes until golden brown.
  7. Add cold water to the skillet, cover, and steam for 7-8 minutes until the water evaporates.
  8. Remove the lid and cook for 2 more minutes to crisp the bottoms.
  9. Alternatively, boil dumplings in water for 5-7 minutes until they float.
  10. Serve warm, garnished with sesame seeds and green onions.
