  • 4 pieces Chicken Thighs or Breasts Thighs for extra tenderness or breasts for a lean option.
For the Marinade
  • 2 tablespoons Fresh Lemongrass Finely minced.
  • 4 cloves Garlic Mince finely.
  • 2 tablespoons Fish Sauce Adjust according to taste.
  • 1 tablespoon Oyster Sauce Optional but recommended.
  • 1 tablespoon Light Soy Sauce
  • 1 tablespoon Brown Sugar Adjust according to your sweetness preference.
  • 1 teaspoon Ground Black Pepper Adjust to your flavor profile.
For Cooking
  • 2 tablespoons Vegetable Oil Can swap for another high smoke point oil.
  • 1 medium Onion Thinly sliced.
For Garnish
  • 1 piece Red Chili Sliced.
  • 1 bunch Fresh Cilantro
  • 2 wedges Lime

Method
 

Cooking Steps
  1. Heat 2 tablespoons of vegetable oil in a skillet over medium-high heat and sauté sliced onions for 2-3 minutes.
  2. Combine chicken with minced lemongrass, garlic, fish sauce, oyster sauce, light soy sauce, brown sugar, and black pepper in a bowl. Marinate for 15-30 minutes.
  3. Add marinated chicken and sauce to skillet with onions. Stir-fry for 8-10 minutes until chicken is cooked through.
  4. Taste and adjust seasoning with fish sauce or brown sugar as desired.
  5. Remove from heat and garnish with sliced chili, cilantro, and lime. Serve with jasmine rice or vermicelli noodles.
