Ingredients
  

Chicken Marinade
  • 4 pieces Boneless, skinless chicken breast
  • ¼ cup Olive oil Extra virgin recommended
  • 1 tablespoon Lemon juice Freshly squeezed
  • 3 cloves Garlic Minced
  • 2 teaspoons Oregano
  • 1 teaspoon Paprika
  • to taste Salt
  • to taste Pepper
  • to taste Red pepper flakes
Fresh Salsa
  • 1 medium Cucumber Diced
  • 2 medium Tomatoes Seeded and diced
  • 1 medium Bell pepper
  • ¼ medium Red onion Finely chopped
  • ¼ cup Parsley Chopped
  • ½ cup Feta cheese Crumbled
Assembly
  • 4 pieces Pitas Warmed for pliability
  • 1 cup Tzatziki sauce

Method
 

Preparation
  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, paprika, salt, pepper, and red pepper flakes. Add the chicken to the marinade.
  2. Cover and let the chicken marinate for at least 15 minutes, or up to 45 minutes for more flavor.
  3. While the chicken marinates, prepare the salsa by chopping the cucumber, tomatoes, bell pepper, and red onion, then combining them in a bowl with parsley and feta cheese.
  4. Heat a skillet over medium-high heat, add the marinated chicken, and cook for about 3-5 minutes per side until cooked through.
  5. Warm the pitas over a flame or in a dry skillet.
  6. Assemble by placing chicken in each pita, topping with salsa and tzatziki sauce.
