Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken thighs with salt, pepper, onion powder, garlic powder, smoked paprika, and fresh thyme.
  3. Sear the chicken thighs skin-side down in a heated skillet with olive oil for 8-10 minutes.
  4. Add sliced red onions and honeycrisp apples around the chicken in the skillet.
  5. Prepare the sauce by adding butter, apple cider, chicken broth or wine, Dijon mustard, and minced garlic to the skillet.
  6. Simmer the sauce for 5 minutes, stirring occasionally.
  7. Roast the chicken in the oven for 20-25 minutes until it reaches 165°F (75°C).
  8. Remove from the oven and let the chicken rest for 5 minutes before serving.
