Step-by-Step Instructions for Shandong Roast Chicken
  1. Rinse the chicken under cold water, then pat dry. Rub with salt and pour boiling water over the skin to tighten it for crispiness.
  2. In a bowl, combine dark soy sauce, Shaoxing wine, and ginger juice. Rub mixture over chicken and marinate overnight if possible.
  3. Preheat oven to 200°C (392°F). Line a roasting pan with baking paper and place chicken breast-side up. Roast for about 1 hour until golden brown.
