- Rinse the chicken under cold water, then pat dry. Rub with salt and pour boiling water over the skin to tighten it for crispiness.
- In a bowl, combine dark soy sauce, Shaoxing wine, and ginger juice. Rub mixture over chicken and marinate overnight if possible.
- Preheat oven to 200°C (392°F). Line a roasting pan with baking paper and place chicken breast-side up. Roast for about 1 hour until golden brown.
- While resting, mix black vinegar, soy sauce, sugar, chilies, coriander root, and minced garlic in a bowl.
