  • 250 grams Frozen Udon Noodles Ideal for convenience
  • 2 tablespoons Cooking Oil Neutral oil like vegetable or canola
For the Protein
  • 200 grams Large Shrimp Peeled and deveined
  • Chicken, Beef, Pork, Bacon, or Tofu Substitutes for shrimp
For the Vegetables
  • 1 medium Onion Yellow or sweet, sliced
  • 2 cloves Garlic Fresh, minced
  • 1 cup Cabbage Shredded finely
  • 1 medium Carrot Julienned
  • 100 grams Mushrooms Shiitake or button, sliced
  • 2 tablespoons Green Onions Freshly chopped, for garnish
For the Sauce
  • 3 tablespoons Dark Soy Sauce
  • 2 tablespoons Oyster Sauce Vegetarian version if needed
  • 1 tablespoon Mirin Sweet rice wine
  • 1 tablespoon Brown Sugar Can substitute regular sugar
  • 1 teaspoon Gochugaru or Red Pepper Flakes Optional for heat
For the Garnish
  • 2 tablespoons Kewpie Mayo For drizzling
  • 1 tablespoon Bonito Flakes For umami boost
  • 1 tablespoon Sesame Seeds Toasted

Method
 

Preparation
  1. Soak the frozen udon noodles in hot water for about 1 minute, then rinse under cold water to stop cooking.
  2. Season the shrimp or chosen protein lightly with salt and pepper.
  3. In a wok, heat the cooking oil over medium heat and cook the shrimp for approximately 2 minutes.
  4. Sauté sliced onion and minced garlic in the same wok for about 1 minute.
  5. Add shredded cabbage, julienned carrot, and sliced mushrooms and stir-fry for 2-3 minutes.
  6. Add cooked udon noodles and the shrimp back to the wok with sauce mixture, stir-frying for another 2-3 minutes.
  7. Garnish with chopped green onions, drizzle with Kewpie mayo, and sprinkle with bonito flakes and sesame seeds before serving.
