Method
- Sear roast in olive oil in a large skillet
- Add roast to slow cooker with onion, carrots, and potatoes
- In a bowl, whisk broth, tomato paste, rosemary, garlic powder, salt, and pepper
- Pour mixture over the meat and vegetables
- Cook on low for 8–9 hours or until beef is tender
Notes
- Tomato paste adds richness and depth
- Can be finished in the oven at 300°F for a browned top
- Use leftovers in sandwiches or stews
