Ingredients
  

  • 3 lb beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion quartered
  • 4 carrots chopped
  • 3 potatoes chopped
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Sear roast in olive oil in a large skillet
  2. Add roast to slow cooker with onion, carrots, and potatoes
  3. In a bowl, whisk broth, tomato paste, rosemary, garlic powder, salt, and pepper
  4. Pour mixture over the meat and vegetables
  5. Cook on low for 8–9 hours or until beef is tender

Notes

  • Tomato paste adds richness and depth
  • Can be finished in the oven at 300°F for a browned top
  • Use leftovers in sandwiches or stews
