Ingredients
  

For the Noodles
  • 8 oz Rice Noodles or ramen or udon for a different texture.
For the Protein
  • 1 lb Pork Chops can be replaced with chicken or tofu.
For the Vegetables
  • 2 cups Snow Peas or frozen stir-fry vegetables.
  • 2 cups Carrots or bell peppers or green beans.
For the Sauce
  • 1/3 cup Soy Sauce or tamari/coconut aminos for gluten-free.
  • 2 teaspoons Chili Paste adjust to taste.
  • 1 tablespoon Honey or maple syrup for a vegan alternative.

Method
 

Cooking Steps
  1. Boil a large pot of water and cook rice noodles according to package instructions, about 4-5 minutes. Drain and rinse under cold water.
  2. Heat oil in a skillet, season pork chops with salt and pepper, and cook for 5-7 minutes until browned. Remove and let rest.
  3. In the same skillet, add snow peas and carrots. Sauté for 2-3 minutes until tender-crisp.
  4. Whisk together soy sauce, chili paste, and honey. Pour sauce over vegetables and cook for another minute.
  5. Return pork to skillet, add noodles, and toss to coat with sauce. Cook for 2-3 minutes until heated through.
  6. Serve immediately, optionally garnished with sesame seeds or chopped peanuts.
